I love to make homemade soup in the fall and winter (mostly the idea of it as I have yet to follow through with this). My plan is to dust off the crock pot and start my soup venture this weekend. Cooking is all about building confidence and I think I can handle the simplicity of the slow-cook approach. Throw everything in one pot, turn it on, and have something wonderful at the end of the day (not to mention the yummy, delicious smells that permeate your house). First up in the crock will be Wisconsin cheese soup with crushed pretzels on top and maybe some beer bread.

Chicken Tortilla Soup (Slow Cooker Style)
Opening the cans is the hardest part.
2 cans black beans
2 cans of Rotel (tomatoes)
2 cans chopped green chiles
3 chicken breasts
Put everything in crock pot and cook on low for 10-12 hours. At end of cooking, shred chicken with a fork. Served topped with cheese, sour cream, and tortilla chips.
Slow Cook Fajitas
1 1/2 - 2 lbs steak or chicken
1 onion thinly sliced
1 red or green pepper
1 clove garlic
1 jalapeno chile seeded & finely chopped
2 tsp. chili power
1/2 tsp. ground cumin
1/4 tsp. salt
1/4 C. veg. oil
1 Tbls. fresh lemon or lime juice
8 -10 flour tortillas
1/2 C sour cream
1 avocado, peeled, pitted and thinly sliced
Directions:
Cut meat across the grain into 1/2 in. diagonal strips. Place in a slow cooker. Top w/onion and bell pepper. In a small bowl, combine garlic, chile, chili powder, cumin salt, oil and lemon or lime juice.
Pour mixture over meat. Cover and cook on low 6 - 7 hrs. or until meat is tender. Spoon several slices of meat w/sauce onto center of tortilla, top w/ sour cream and avocado.
